- Not a fancy upscale uptown restaurant - a few benches under a tree will suffice as long as the place meets the minumum acceptable treshold of health and safety
- Where people are willing to sacrifice comfort and service just because the food is good
- Where hardcore food lovers would congregate, eat and talk about other good food at the same time
- Where people were willing to drive for hours to nowhere just to eat one specific food from one specific place
- Where people are willing to queue up for their turn to eat
- They have to be unique in one way or another - they are already too many "warung seafood tomyam" or "medan ikan bakar" or "nasi kandar" and "nasi campur" around that they would have to be really different in one way or another in order to be on the list
- A local well-kept-secret would be a great candidate - or where a family for generations only know how to make and sell that one thing
- Where my wife's aunt "Kak Ana" would be impressed of - you'd have to hear the story first hand from me to understand this!
- ... and where at the end of the meal, you would pat your tummy and say, "Now, THAT's good food...!"
